One set menu

You are on the committee planning your company's annual sales conference dinner.

The plan is one set menu for all two hundred staff. Tanvi, a colleague on the committee, says that leaves out employees whose faith restricts what they may eat, and that a side salad is not a dinner. The events coordinator replies that certified religious meals come from separate caterers, would stretch a budget that was already cut this year, and need exact headcounts weeks ahead, when half the staff have not yet confirmed. The committee asks you to recommend whether to change the catering plan and, if so, how.
